Waste Not Want Not…

“Waste not want not,” is a phrase that we try to live by here at the Earthbound Kitchen year round. However, if there’s one time during the year that we need reminding of how to avoid wasting food it’s probably Thanksgiving. I don’t know about all of you, but we have a ridiculous amount of food leftover from the holiday. Half a pie, an entire loaf of pumpkin nut cake, mashed potatoes, gravy, sweet potato soufflĂ©, stuffing, green bean casserole, and 6 acorn squash halves that every person at dinner was too polite to eat because there weren’t enough to go around.

As far as I’m concerned apple pie and pumpkin nut bread make a great breakfasts, they can’t possibly be any worse for you than some of that sugar filled cereal that most people eat every morning. Most of the side dishes left over can be eaten with various other main courses. The real question is what to do with all that turkey. Here are some ideas that I’ve come up with so far:

The turkey soup is fantastic, even after I carved the remaining turkey up and got enough meat for a dozen sandwiches I still had enough left on the bones to make an incredibly rich and tasty broth. My favorite so far though has been the open face turkey sandwiches. For these I take a slice of bread and spread a little gravy on it. Then I layer on some stuffing and some turkey. Pour a little more gravy on top and lay on a couple of slices of cheese if you’re feeling daring. Bake in the oven at 250 or 300 for 10 or so minutes until the sandwich is hot and the cheese is melted. Savor with a side of cranberry juice. Yum!

    I find the problem with leftover turkey is that there’s NEVER enough gravy. MY GOD I love (good*) gravy.

  2. A slice or two of bacon (locally raised and cured, of course) can do wonders for a turkey sandwich.

  3. Another idea is to shred the leftover turkey is a food processor with some mayo and whatever kind of veggies you want. Then spread it on a quesadilla (not sure if the spelling is right), sprinkle some cheese on it, and fry it on a frying pan. As always, drink a lot of beer to make it taste better. I love the site!!! Great job!

  4. I don’t know this “Steve” gentleman but he portrays himself to be a highly intelligent individual. I wouldn’t doubt that his intelligence is matched with rouged good looks.

    I agree in that cheese and beer makes everything tastes better. EVERYTHING

  7. Gravy is so easy to make more of though. In fact, with a simple gravy mix, port wine, and a little black currant jelly, you can have yourself a quick and fabulously rich gravy. Seriously, it rocks. Make sure you give it a bit to reduce and thicken.

  8. Stew: I totally agree. Good gravy is a commodity. That’s why I only have one recipe listed that used gravy with the leftover turkey…there’s just not enough to go around.

    Dr. K, Steve, and Dwight: I think that bacon, beer, and cheese might be the most perfect foods on the planet. In fact, I hope to have a bacon party sometime in which every food served has bacon in it and the beer is bacon flavored (real…and not as gross as you’d think).

    Laura: My mother is most certainly a machine. I don’t know what you’re on about.

    Paul: I’ve gotta try this gravy of yours sometime. Veggie I assume? Maybe we could get together and I could make a pile of mashed potatoes, you could make gravy and then we could eat starch drenched in yummy-ness.

  9. OK…now I’m definitely hungry again for more holiday food. Any suggestions for pre-planning recipes for Winter Solstice/Christmas Feasts? Pre-planning is good!

  10. Excellent idea, Nate. I’m sure I can do a few posts on winter holiday foods. Until then, my recipe for roast goose and roast chicken would probably work as a main course in a pinch.
